All four elements were happening in equal measure - the cuisine, the wine, the service, and the overall ambience. It taught me that dining could happen at a spiritual level.
But that's fine, because I like to have control of the ambience.
The past becomes a texture, an ambience to our present.
I always bring an orange scarf, not just so I can wear it or tuck it into my pocket, but also so I can throw it over a lamp in the hotel room. Orange is my favourite colour, and it gives a lovely, warm ambience.
